Crepes with cheese and apricot jam
Instructions
First, prepare the filling: in a saucepan filled with boiling water then soften the raisins for about 15 minutes.
Spent the time needed, wrap the raisins in absorbent paper.
Passed in the mixer the cream cheese, jam, egg yolks, lemon zest and vanilla in order to obtain homogeneous and soft dough.
In a bowl, add sugar to egg whites and beat well until they form a compact cremina.
Pour the cheese mixture and jam, obtained with the mixer, and finally add the raisins gently.
Prepare the crepes with ingredients listed.
Fill with the mixture and place them in a preheated oven at 200 degrees for 30-35 minutes.
Sprinkle plenty of icing sugar and serve.
Ingredients and dosing for 4 persons
- For the filling:
- 1/2 cup of sultanas
- 1 cup of boiling water
- 250 g of fresh cheese
- 1/2 cup of apricot jam
- 2 eggs
- 1 teaspoon of lemon zest
- 1 teaspoon of vanilla powder
- 1/4 cup of sugar
- For pancakes (about 25):
- 2 eggs
- 3 cups of sugar
- 1 cup of milk
- Abundant of icing sugar
