Surprise carrot croquettes
Instructions
Boil the carrots for a quarter of an hour.
Cut them to pezzetti, flavour in a pan with butter for 15 minutes.
Withdrawn from the heat and pass through a sieve.
Collect the proceeds into a bowl, add an egg, five tablespoons of grated cheese, a pinch of nutmeg.
Stir, add salt, pepper and add the bread crumbs it takes to get a pretty hard.
Make croquettes, stuffed each with a block of Swiss cheese, flour them.
Beat the egg with a little salt, dip the croquettes, put them in bread crumbs and FRY in hot oil.
Formed a pyramid of croquettes on the serving dish and serve hot.

- 1000 g of carrots
- 70 g of emmenthal cheese
- 40 g of butter
- 2 eggs
- Flour
- 5 tablespoons of grated cheese
- Breadcrumbs
- 1 pinch of nutmeg
