Shrimp Croquettes (Crocchette di Gamberi)
Instructions
Mix 4 tablespoons of flour in 1/2 glass of milk and 1/2 cup of broth, salt, pepper and pass the fire, stirring, to thicken.
Add 1 tablespoon of cream and 2 egg yolks, the juice of 1/2 lemon, 2 tablespoons chopped parsley and 500 g of boiled shrimp, shelled and chopped.
Cool the mixture, divide into small portions, raise croquettes to pass in 2 whipped egg whites and bread crumbs and FRY in hot oil.
Serve hot.
