Sweetbreads in marsala sauce
Instructions
Put in the veal sweetbreads bath in warm water that rinnoverete twice when you will be shot dead.
This is to remove the Sweetbreads the blood part, so that they remain then white.
Cut into slices not too thin, flour them lightly and put them to cook in the butter.
Cover with marsala and then finish cooking with broth.
Serve each slice on a crostone of bread fried in butter and pour over the sauce.

- 2 veal sweetbreads
- Flour
- 2 cups of marsala wine
- Broth
- Some of fried bread croutons
