Boil the potatoes in their skins.
When they are cooked, Peel and pass through a food mill.
Add to the mixture of eggs and cheese, a plenty of chopped parsley, salt and flour (you work on how much useful to obtain a fairly firm dough).
Formed slightly squashed balls and let rest for 5 minutes before you fry them.
