Fish croquettes
Instructions
Boil the fish and pass through a sieve with anchovies previously cleaned.
Make a white sauce with butter and flour, dilute with fish broth and wine.
Add the sauce to the pulp, salt, pepper and incorporate two eggs.
Pour the mixture on a platter, make croquettes, flour them and fry them in hot oil.

- 400 g of cod fillets
- 4 salted anchovies
- 2 eggs
- 50 g of butter
- 4 tablespoons of flour
- 1/2 cup of white wine
- Olive oil
- Salt
- Pepper
