Pea croquettes
Instructions
Grainy and boil the peas, then run the Mashers letting fall into a bowl.
Add the rice flour, mixing well, then a pinch of salt and pepper, ricotta, eggs, grated Parmesan and chopped Basil.
Stir, adding a little flour to mix the ingredients: the dough should eventually be quite consistent.
Split the dough into round patties, put them in the breadcrumbs, then deep fry in hot oil until they are golden brown.
These croquettes are, more than an outline, a main dish, light and tasty.
Serve arranged in pyramid, garnish from clumps of Basil.
Ingredients and dosing for 6 persons
- 600 g of fresh shelling peas
- 50 g of rice flour
- 80 g of ricotta
- 2 eggs
- 3 tablespoons of grated parmesan cheese
- 2 bunches of basil
- Flour
- Breadcrumbs
- Salt
- Pepper
- Vegetable oil for frying
