Spinach croquettes
Instructions
Put the spinach in a saucepan, cover and let them thaw on low heat.
Then puree through a sieve crushing them with the back of a spoon to remove all the water.
In a bowl, place spinach, parmesan, a pinch of nutmeg, salt and pepper and stir well with wooden spoon.
Lightly beat the egg with a fork and embed as spinach.
Divide the preparation into eight portions.
Lightly flour a work surface and posatevi the eight servings of spinach.

Put the breadcrumbs in a dish and round off the kibble making it adhere well, then shake them to remove the excess.
You heat the oil in a large frying pan and fry the croquettes in a single layer for four or five minutes on medium heat, rigirandole half-cooked with a shovel.
Meanwhile prepare the decoration: immerse the tomatoes for 30 seconds in boiling water, cool it under water, sbucciatelo, cut it in half, remove the seeds and chop the flesh into cubes.
When the croquettes are warm on the inside and golden brown on the outside, remove from the pan with a skimmer and let them dry on paper towels.
Posatele on a hot serving dish and sprinkle with pieces of tomato.

- 300 g of frozen chopped spinach
- 25 g of grated parmesan cheese
- 20 g of breadcrumbs
- 1 egg
- 2 tablespoons of flour
- 3 tablespoons of olive oil
- Nutmeg

- 1 small tomato
