Crostini with spleen
Instructions
Finely chop 1 small onion, 1 garlic clove and 1/2 carrot and sauté them in a pan with oil and a little butter.
Add the spleen (which has been removed the skin) and cook adding a bit of white wine and a little vegetable broth.
When the mixture is cooked, pass it to the food processor along with anchovies, then put back in the saucepan and keep warm while preparing the bread fried in butter.
Spread the mixture on the slices and bring to the table the croutons well hot.

- 1 bread
- 1 beef spleen
- 3 anchovies
