Crostini with anchovies and chicken liver
Instructions
Chop the chicken livers finely and put them to cook in hot butter in skillet.
Leave FRY to fire too high, adding once in a while a few tablespoons of water, so that they do not become too dry.
Meanwhile chop the anchovies and de-boned water along with the capers and add them to the chicken livers, stir and continue cooking for a few minutes, dosing of salt and pepper.
Finally mix in the flour mixture diluted in a little water, stir, leave on the fire for a few minutes until cooked and the sauce made quite homogeneous.
Meanwhile, fried slices of bread into the oil (or if you prefer, butter), sprinkle with the mixture still warm croutons and serve.

- 200 g of chicken livers
- 50 g of butter
- 2 anchovies
- 1/2 tablespoon of flour
- 1 handful of capers
- Some of slices bread (or bread)
- Salt
- Pepper
