Crostini with chicken livers and ham
Instructions
In a medium-size casserole small heat half the butter with the olive oil, prosciutto insaporitevi and chopped onion and, for at least half an hour, stir patiently adding sometimes broth or warm milk to keep the mixture a certain humidity.
Add the sliced livers and Sage leaves.
Boil for 3 minutes stirring constantly accurate.
Withdrawn from heat, chop the mixture and place it back on the stove.
Bring to a boil, adding a few drops of milk or broth if necessary.
Mix raw butter to mixture, Cook again 3 minutes and turn off.
Cut the bread, put the mixture on top of chicken livers.
At the bottom of a dish you have to grate the sprigs of Rosemary and lay over the crostini.
Accompanying wines: all wines ' novelli ' or Bardolino DOC.

- 40 g of butter
