Toast with mozzarella
Instructions
Prepare the sauce: in a small saucepan with the oil fry the chopped onion and parsley, washed with the broth and stir with a wooden spoon.
Cut 16 slices gaining Tuscan bread, about 1/2 thick.
Scalded tomatoes in a pot with boiling water, Peel and take away seeds; sliced mozzarella.
Place the countertop eight slices of bread, place on each of two slices of mozzarella, a Sage leaf and some tomato fillets, seasoned with salt and pepper, then cover with the remaining bread slices.
In a bowl beat the egg with a pinch of salt, soak the rolls quickly, making sure they are coated on both sides, then toss them in the breadcrumbs.
Stop the sandwiches made with two wooden skewers, put them in a pan with plenty of olive oil, already warm, and fry them over medium heat until the bread is golden and crunchy become.
Transfer slices to a serving dish, sprinkle them with a little of the prepared sauce and serve immediately, passing the remaining sauce.

- 1 form of tuscan bread
- 2 mozzarella
- 8 leaves sage
- Olive oil
- Salt
- Pepper
- 3 tomatoes
- 1 egg
- 100 g of breadcrumbs
- For the sauce:
- 3 tablespoons of olive oil
- 2 sprigs of parsley
- 1/2 onion
- 1 glass of broth
