Sicilian anchovies
Instructions
Soften the bread soak it in milk.
Blanch the tomatoes for a few seconds then Peel and chop coarsely.
Saute the sliced onion 4 tablespoons of oil, then add the tomatoes, add salt and pepper, add the oregano and cook to vivacious fire for about ten minutes.
Finally, add the capers washed to remove salt and chopped Basil.
Clean the anchovies leaving attacked each other the two fillets.
Wash them well and let them drain on a chopping board.
Do heat 2 tablespoons oil in a small frying pan, add 4 anchovies and let them brown then remove the Pan from the heat and add the sliced bread squeezed, an egg, pecorino and a little salt and pepper.
Work well the mixture with a fork and then divide it into other anchovies that richiuderete to book.
Passed the first fish in flour, then in beaten egg with a little salt and pepper, and then in the breadcrumbs.
FRY quickly in hot oil and serve immediately accompanied by tomato sauce.

- 24 anchovies
- 400 g of ripe tomatoes
- 2 slices of bread
- 2 eggs
- 3 tablespoons of sweet pecorino cheese
- == 1 small onion
- 2 bunches of basil
- 2 tablespoons of salted capers
- 1 pinch of oregano
- 2 tablespoons of flour
- Breadcrumbs
- 1/2 cup of milk
- 6 tablespoons of olive oil
- Salt
- Pepper
