Sultan's delight
Instructions
Cook the meat with 1 ounce of butter, chopped onion, chopped tomatoes, salt, pepper and bay leaf for 1 hour and a half without adding water.
Prepare separately a mashed Eggplant made soak, holding to the queues on the brace and peel with a knife; then add the pasta with a sauce made with 1 gram of butter, flour and milk.
After 6 or 7 minutes add the grated cheese.
Serve on a platter surrounded by mashed meat.

- 4000 g of eggplant
- 2000 g of mutton in pieces
- 100 cl of milk
- 200 g of flour
- 200 g of butter
- 200 g of gruyere cheese
- 4 tomatoes
- 4 red onions
- Salt
- Pepper
- 1 leaf of laurel
