Sift the flour and put it in a bowl with sugar, salt, baking powder, lemon peel, egg, butter pieces, knead quickly with your hands, form into a ball and put it in the refrigerator for 30 minutes, covered with a cloth.
After this time, roll out the dough with the rolling pin, into a sheet one centimetre high and, using a glass, cut into round shapes, brush with egg and sprinkle with pine nuts.
Grease with butter and flour the baking, lay the cupcakes and cook in the oven at 200 degrees for 15 minutes.
