Instructions
Peel and slice eggplants.
Let stand covered with salt.
Dry Them.
Slice the mozzarella and crumble some anchovies.
Have a slice of mozzarella on eggplant, garnish with a bit of anchovy and a Basil leaf and cover with another slice of Eggplant pressing the edges.
Pass the parcels in the flour, then in beaten eggs with a pinch of salt and finally in breadcrumbs.
Fry them in plenty of hot oil and remove them when they are golden.

- 3 medium aubergine
- 1 mozzarella
- 2 eggs
- Anchovies in olive oil
- Flour
- Breadcrumbs
- Basil

- Abundant of olive oil
