Instructions
Cook in butter the liver of Guinea fowl, add the Bacon (or sausage) and the Sage, after having crushed the whole thing.
Add the breadcrumbs, salt, pepper, egg and cognac; mix well and pour the mixture inside the Guinea fowl, you have slightly salty.
Sew the ends and place the Guinea fowl in a pan, add a little butter and bake 1 hour.

- 1 guinea fowl 1200 g's
- 200 g of bacon (or sausage)
- 1 egg
- Breadcrumbs soaked in milk
- Sage
- Salt
- Pepper
- Butter
- 1 dram of cognac
