Instructions
Place in a large Salad Bowl 500 g of flour and pour slowly, stirring with the whisk, about 150 cl cold water until obtaining a very liquid batter.
Let it sit for half a day, remove the foam that will be formed on the surface and add salt.
Spread on the bottom of a baking dish for 30 cm pizza about half a glass of olive oil, pour the batter, stir to mix the oil and cook for about an hour in the oven already warm to 200 degrees, until the surface is golden.
Sprinkle with plenty of pepper and, with rosemary leaves or fresh shallots sliced thin.
Serve the hot porridge.

- Some leaves of rosemary (or some fresh onions sliced thin)
