Steamed lobster
Instructions
Kill a lobster with a precise shot the knife at the base of the head.
Wash well and cook for 2 hours.
When the meat is very tender, free lobster from the shell and slice the meat, add the pulp of chele and ' coral ' inside.
Keep it warm-damp until serving, topped at the last minute with olive oil, vinegar, chopped black olives and orange peel, salt and pepper to taste and accompanied with a salad of oranges, fennel and black olives.
