Beat breast slices, dip in flour, then in beaten eggs with ground pepper, then in breadcrumbs Cook in plenty of warm butter and season with salt only when cooked.
Chop herbs and shallots.
Combine the chopped 30 g butter to bubbling, immediately turn off the heat, pour over the Turkey slices and serve.
