Pass the meat slices in the flour, toss lightly in butter, on both sides, then remove the meat from the Pan, in which we'll roast a clove of garlic and Sage.
Remove the garlic, put the slices of meat, stretch with a bowl of broth and, soon after, with wine, finish cooking.
