Gently wash the figs, then without dry, roll in sugar so that you remain covered.
Place them in a baking dish that holds them, add a little water and lemon rind into small pieces.
Cook in the oven already warm to 160 degrees for about 10 minutes.
When the sugar has caramelised, remove them from the oven and allow to cool in the same pan.
Serve on individual plates.
