Herring fillets with onions
Instructions
Clean the herring and cut into threads that you will leave it sit in boiling milk for at least two hours.
For the same time let marinate the sliced onions in vinegar, then rinse with water, dry and season with oil, salt and pepper.
Drain and herring fillets from milk and dry poggiandoli on kitchen paper towels; then put them in a serving dish, toss with olive oil, lemon juice, salt, pepper and mix them together with the slices of onion.

- 8 kippers
- 8 red onions
- 1 lemon
- 100 cl of milk
- 2 cups of wine vinegar
- Olive oil extra virgin
- Salt
- Pepper
