Sole fillets in salad
Instructions
Cut or do derive from the fishmonger two fillets sole.
Put them in a dish, pour over the lemon juice, cover with plastic wrap.
Keep in the refrigerator for a couple of hours.
Prepare the salad by cutting checks two green peppers and one yellow, very thin slices carrot and cucumber, diced tomatoes peeled and deprived of seeds.
Collect all in a salad bowl.
In a bowl place 5 tablespoons of olive oil, add a tablespoon of chopped Rosemary, one tablespoon of vinegar, salt and pepper, pour over the salad.
Over lay the fillets of sole drained and diced.
Stir, add salt and serve.
Accompanying wines: Sauvignon Friuli Grave DOC Superiore, Montecarlo Bianco DOC, Fiano Di Avellino DOC.

- 2 great sole
- 2 lemons
- 3 peppers
- 1 cucumber
- 1 carrot
- 2 tomatoes
- 1 tablespoon of chopped rosemary
- 1 tablespoon of wine vinegar
- 4 tablespoons of olive oil
- Salt
- Pepper
