Instructions

Boil the wine with all the smells to reduce it to a smooth sauce.

Sauté the fillets with a knob of butter, a tablespoon of olive oil, Rosemary, garlic, salt and pepper.

Combine the meat, wine sauce to soak for a minute then remove the meat from the Pan and stir in a little butter sauce.
