Clean and wash the parsley and shallots, then chop finely.
Melt 30 g of butter in 1 Pan and cook the fillets to open flame, for 2 minutes.
Meanwhile, melt remaining 30 g butter in an ovenproof dish.
Remove the fillets from the Pan, pass them in the baking dish, salt, pepper, butter, roll them and sprinkle them with chopped scallions and parsley.
Put in hot oven at 250 degrees for 5 minutes, then serve.
