Flowers alla romana
Instructions
Clean the flowers gently with a damp cloth and remove the pistils.
Prepare the batter by whisking the eggs with 1 tablespoon of lemon juice and salt.
Add the sifted flour and 4 tablespoons beer.
Dice the mozzarella and anchovies in half and fill each flower with a little mozzarella cheese and 1/2 anchovy.
Dip them in the batter and fry them in boiling oil.
Drain well and serve hot.

- 20 pumpkin flowers
- 100 g of mozzarella
- 10 anchovy fillets in olive oil
- 3 eggs
- 4 tablespoons of flour
- Lager
- 1 tablespoon of lemon juice
- Olive oil
- Salt
