Baked spinach flan
Instructions
Boil the beets in salted water, drain and mash with butter and blend.
Make a white sauce with butter, flour and milk, stir in the spinach and Parmigiano Reggiano, add eggs and salt.
Place the mixture into a buttered mould and powdered with breadcrumbs and go in the oven for about 20 minutes.

- 100 g of parmigiano-reggiano
- 50 g of butter
- 40 g of flour
- 2 eggs
- 50 cl of milk
