Arancini with speck
Instructions
Boil the rice.
Meanwhile, saute the chopped leeks and bacon in half the butter.
To firm 1 egg, sgusciarlo, chop and add to Bacon and Leek.
Season with salt and pepper.
Season the drained rice with remaining butter, grana, 1 raw egg and bacon.
Mix well and form balls.
Toss in flour, dip in 2 beaten eggs with salt and pepper and then in the breadcrumbs.
FRY in hot oil.

- 400 g of rice
- 4 eggs
- 1 leek
- 100 g of speck
- 60 g of butter
- 50 g of grated parmesan cheese
- Salt
- Pepper
- Olive oil
- Breadcrumbs
- Flour
- Frying oil
