Instructions
Fragmented minutely chicken carcasses and place them in a saucepan with the hills, to meat and innards.
Pour in a quart and a half of water and bring to the boil.
Skim, seasoned with salt and add the carrots and celery, sliced, sliced onions and herbs tied like a bouquet garni.
Lower the heat and simmer for 4 hours.
Degreased and passed through a fine cloth.
The meat used for other dishes.

- 300 g of lean boneless veal
- 300 g of veal hock
- 1000 g of carcasses, necks and chicken innards
- 2 carrots
- 2 onions
- 1 stalk of celery
- Parsley
- Laurel
- Thyme
- Salt
