The borraggine omelette
Instructions
Wash the borraggine, cut it finely and add over low heat with a few tablespoons of oil in a covered container.
Beat the eggs, add the grated cheese, breadcrumbs soaked in water and squeezed, some leaves of Marjoram, garlic clove, chopped very fine and, finally, the borraggine.
Add salt and pepper.
In a pan heat two tablespoons of olive oil, pour the mixture and level the surface by tapping lightly with a spatula.
Cook at low heat first on one side and then the other.
This pancake must be high thickness, but should be quite soft.

- 4 eggs
- 600 g of borraggine
- 50 g of breadcrumbs
- 2 tablespoons of grated cheese
- Marjoram
- 1/2 clove of garlic
- Olive oil
- Salt
- Pepper
