Instructions

Cut the courgettes in thin slices and fry them in a pan with two tablespoons of olive oil and a knob of butter.

Add salt and pepper.

Beat the eggs, salt them just join and Zucchini Saute.

Leave In a pan melt a knob of butter and bake the omelet making it brown slightly on both sides.

Can be served hot or cold.
