Fried Carrots (Frittata di Carote)
Instructions
Scrape the carrots and cut.
In a bowl beat the eggs with salt and pepper; Add the carrots, sliced cheese, bread.
In a pan heat a knob of butter, pour the egg mixture and cook the omelet on both sides.
Served on a serving dish, garnish with parsley and serve.

- 6 eggs
- 4 carrots
- 100 g of gruyere cheese
- 100 g of crumbled fresh bread
- Butter
- Salt
- Pepper
