Fried onions (2) (Frittata di Cipolle (2))
Instructions
Cut into slices the four onions and let them Brown, over low heat, in a pan with a little oil.
In a bowl beat the eggs, then add the onions, grated Parmesan cheese and a pinch of salt.
Pour the mixture into the pan used previously and let Cook in olive oil.
After a few minutes turn the frittata with the lid of a pot: continue frying on this side reminding you that the fire should never be violent.
Finally, removed from the Pan, the omelette on absorbent paper.
Serve hot, sliced, garnished with some salad leaf.
Suggested wine: Langhe Chardonnay.

- 6 eggs
- 1 handful of grated parmesan cheese
