Rolled pancakes
Instructions
Wash and peel the tomatoes, cut them into cubes and put them to soak in a bowl with 2 tablespoons of olive oil and basil.
Meanwhile, beat the eggs with a little Parmesan cheese, 2 tablespoons milk, a pinch of Marjoram, salt and pepper.
Heat a tablespoon of oil in a pan, pour in the fourth part of the beaten eggs and cook without turning the frittata; remove from pan and prepare the other three.
Distributed in equal parts on the tomato omelettes left flavour in Basil.
Roll wrapping up with a slice of melted cheese.
To close with a toothpick, being careful not to break the omelette.
Passed in already warm oven at 180 degrees for 5 minutes and serve immediately.

- 8 eggs
- 4 small overripe tomatoes
- 4 slices of melted cheese
- 2 tablespoons of grated parmesan cheese
