Rice frittini
Instructions
Cook the rice in salted milk with a pinch of salt for 20 minutes.
Withdrawn from the fire and sweetened to taste.
Let cool (the milk must be completely absorbed by rice); the two eggs and grated lemon peel; make croquettes, put them in the flour (or bread crumbs) FRY in plenty of oil and dry on absorbent paper.
Arrange on a serving dish, sprinkle with sugar and serve with a cherry jam or other taste.

- 200 g of rice
- 100 cl of milk
- Salt
- Sultanas
- Sugar
- 2 eggs
- Breadcrumbs
- Flour
- Cherry jam
- 1 pinch of salt
