Mixed fry of silverfish
Instructions
Clean the fish by depriving them of the head, tail and entrails.
Wash them and dry them.
Toss them in flour and scuoteteli to remove excess.
In a pan heat plenty of oil with a few Sage leaves, then friggetevi before the larger fish and after smaller ones.
Drain them and dry them on absorbent kitchen paper.
Keep them warm.
To frying is completed, place the fish on a serving dish, circondateli with lemon wedges and fresh Sage leaves, salt and pepper spolverizzateli white.
Serve immediately.
Accompanying wines: Pinot Grigio DOC Piave, Bianchello DOC, Bianco Alcamo DOC.

- 1000 g of mixed bluefish
- Flour
- Abundant of olive oil
- 1 lemon
- Some leaves of sage
- Salt
- White pepper
