Instructions
Peel the onion and finely chop the pulp finely.
Peel the garlic and crushing.
Pour 25 cl of water into a pot and add the tomato paste, olive oil, white wine, garlic, onion, coriander seeds and saffron.
Add salt and pepper.
Stir, cover and bring to a boil.
Skim, reduce the heat and let simmer for 20 minutes stirring occasionally.
Meanwhile clean the mushrooms, wash them, dry them and cut them into thin slices.
After twenty minutes immerse in the broth cooking the mushrooms.
If necessary, add a little hot water.
When the mushrooms are tender, pour the contents of the pan into a serving dish.
Let it cool and let marinate for 2 hours in the refrigerator.
To serve, sprinkle with fresh coriander.

- 500 g of cultivated mushrooms
- 4 tablespoons of tomato paste
- 4 tablespoons of olive oil
- 6 tablespoons of dry white wine

- 8 coriander seeds

- 2 tablespoons of finely chopped fresh coriander
