Mushrooms preserved in brine
Instructions
For this preparation you can use porcinelli, igrofori and the like.
Bring to the boil water (enough to boil mushrooms) acidulated with vinegar and flavored with bay leaves, pepper, salt.
Clean the mushrooms; cut them into large pieces and Parboil for 3 minutes.
Drain and blot with a towel.
Once cool place in a glass jar, cover with filtered water and seal.
Sterilize in a Bain-Marie and store in the dark.

- 1 glass of apple cider vinegar
- Laurel
- Sage
- Marjoram
- Unrefined sea salt
- Peppercorns
