Fusilli with mint
Instructions
Blanch the beans for 10 minutes in a little water.
Peel and cut julienne Zucchini, celery, carrot.
Mince the shallots, then add all vegetables to julienne, peas, olive oil, pepper, a pinch of salt, FRY lively heat for a few minutes then lower the heat and add the green beans drained and chopped.
Continue cooking for 15 minutes, basting occasionally with the hot broth.
Cook pasta, drain and pour it directly on the vegetables, sprinkle with mint leaves and grated Parmesan before serving.
