Put in the basket for steaming slices of lemon and fennel and place the prawns.
Cook for 3 minutes as soon as the water boils.
Spray them with the vermouth and cook for another 2 minutes.
Blend the avocado flesh with lemon juice, 1/2 red pepper and a little salt.
Serve the shrimp with avocado sauce aside.
