Spicy Soy-Germ
Instructions
Washed, blanched for 2 minutes the bean sprouts and drain them well.
In a bowl mix water, anchovies de-boned and diced, chopped 1 tablespoon capers washed and chopped coarsely, three tablespoons of olive oil, the lemon juice filtered to colander, a pinch of salt and a bit of pepper.
Place in a salad bowl the bean sprouts, toss with the mixture, add the olives pitted and cut into four, sprinkle with a tablespoon of chopped parsley.
Serve.

- 400 g of bean sprouts
- 3 salted anchovies
- 1 lemon
- 1 tablespoon of chopped parsley
- 1 tablespoon of capers
- 10 green olives
- 3 tablespoons of olive oil
- Salt
- Pepper
