Instructions

Wrap the meat in slices of prosciutto and tie it with a string.

In a saucepan melt the butter in the oil and saute the onion, celery and carrot; soon after put to fire the meat, salt, pepper and Brown on all sides, add the broth and continue cooking for two hours.

After having sifted the bottom of cooking, add the flour, stirring until sauce.

Cut the roast into slices, sprinkle with the sauce and serve.
