Instructions

Practice on meat deep nicks and put in each a bit of Chili, a small piece of bay leaf and a few Sage.

Slam then 10 cl of olive oil, along with vinegar, a pinch of salt, pepper and nutmeg.

Put the meat in a deep dish, and sprinkle with the sauce previously prepared and allow to marinate for about 2 hours drawing it every now and then.

Pour a little of the marinade in a pan, put into the veal breast and browned to good heat, then lower the heat and continue cooking at medium heat for about one hour and 30 minutes, occasionally sprinkling the meat with a few tablespoons of the marinade.

Meanwhile make toasted croutons of bread.

When cooked drain the meat, slice it, arrange the slices, slightly overlapping, on a platter, sprinkle with the cooking and serve immediately, passing though apart from croutons.
