Citrus mint gratin
Instructions
Peel the oranges, grapefruit and lemons and divide them into quarters.
Drain them by retrieving the juice into a cup and place the fruit in a bowl.
Prepare the zabaglione.
In a saucepan, Beat egg yolks with sugar and a pinch of vanilla, add juice the citrus crop, set on fire and at low heat, Cook stirring until the mixture thickens without boil.

Garnish with mint leaves and strips of lemon peel.

- 3 egg yolks

- Some threads of lemon zest
