Salad of race
Instructions
Cook steamed race putting in water onion, parsley, bay leaf, 1 tablespoon vinegar, some peppercorns.
Blanch for 2 minutes in salted water diced zucchini and drain.
Mix diced peeled tomatoes, courgettes, chives, olive oil, salt, pepper and vinegar.
Bone fish and must be flushed with the sauce.

- 1 bit of onion

- 1 leaf of laurel
- 2 tablespoons of aromatic vinegar
