Zucchini salad with thyme
Instructions
Wash and check the zucchini, cut into very thin slices.
Put them in a salad bowl, add the Belgian salad, washed and trimmed, cut into strips half an inch high.
Chop the parsley, mix with plenty of thyme, sprinkle them over the vegetables.
Prepare a vinaigrette emulsifying a spoonful of vinegar, aromatic with two spoons of olive oil, salt and pepper.
Dress the salad and serve.

- 2 heads of belgian salad (endive)
- Abundant of fresh thyme
- Parsley
- 1 tablespoon of aromatic vinegar
- 2 tablespoons of olive oil
- Salt
- Pepper
