Salad of whitebait
Instructions
Wash the whitebait carefully and at length because they contain a lot of sand.
Boil a few minutes in salted water.
Drain carefully and let them cool.
In a bowl, emulsify the oil with the lemon juice filtered to sieve, season with salt and a pinch of white pepper.
Pour everything on whitebait, stir.
After 10 minutes, serve.
