Eggplant rolls
Instructions
Mix chopped tomatoes and deprived of the peel and seeds to mince, breadcrumbs and aromatic to the mozzarella into cubes.
Spread the mixture on the slices of Eggplant and form of stopping services rolls with a toothpick.
Arrange in a baking dish greased with oil, sprinkle with Parmesan cheese, cover with aluminum foil and cook in a hot oven at 180 degrees for 20 minutes.

- 450 g of grilled aubergines
- 8 red tomatoes
- 1 mozzarella small
- 4 tablespoons of breadcrumbs
- 2 tablespoons of grated parmesan cheese
- 1 chopped parsley and garlic
- Salt
- Olive oil
