Salnitrata language
Instructions
Chop all ingredients in mortar, excluding the tongue.
Rub the mixture got the language (not washed) and put it into a container of Crete, covering it with a dish with a weight on top.
Leave it in brine for 10 days, drawing it every day; put to boil in cold water until cooked.
Ingredients and dosing for 4 persons
- == 1 veal tongue
- 6 g of cinnamon
- 12 nails of carnations
- 1 handful of rosemary leaves
- 1 handful of juniper berries
- 12 g of saltpetre
- 1 handful of salt
- 2 cloves of garlic
